Salmon Cheddar Chowder

This is another easy one.  And it's delicious.  It can also be found in our Kurtti cookbook (from Susie Staudinger, pg. 21) if you have it.  I make this fairly often.

Salmon Cheddar Chowder

2 c. diced onion
2 T. butter
2 T. flour
1 1/2 c. water
1 c. diced celery
2 c. diced potatoes
1 1/2 t. salt
1 t. dill weed
1/4 t. pepper
1 pint canned salmon with juices
2 c. milk
10 oz. shredded cheddar cheese

Saute onion in butter.  Blend in flour.  Add water, celery, potatoes, salt, dill, pepper and simmer about 20 minutes or until potatoes are tender.  Add salmon, milk and cheese and heat through on low so cheese does not curdle.  Serve.
